Valtuille La Cova de la Raposa 2023 is an exceptional red wine from Castro Ventosa, sourced from a century-old vineyard (0.2 ha) on sandy soil, south-facing, in Valtuille de Abajo (D.O. Bierzo). The winery's first ‘vino de paraje’ (single vineyard wine), it reveals purity, finesse and very limited production. It reflects the Pérez family's commitment to valuing the identity of each plot and the most authentic expression of the terroir. It is a wine with an artisanal character, produced only in years that guarantee exceptional quality.
Vinification: Manual and rigorous harvesting. The grapes ferment with indigenous yeasts, without external addition, with about 40% whole bunches in 500L open barrels. Maceration lasts 40 to 60 days, with the only work being ‘mouchage’ by gravity, i.e. the cap of must is wetted only once a day, without pumping. This is followed by 12 months of ageing in large used oak barrels, preserving the finesse of the expression.
Tasting Notes: In the glass, it is elegant, with fine red fruit, floral touches and delicate minerality. The sandy soil gives it a very distinctive lightness and freshness. On the palate, it reveals well-present but polished tannins, a compact structure and a balance between concentration and elegance. It is a wine with potential for evolution, favouring subtlety over powerful exuberance.

Vinified separately since 2003, the 2023 Valtuille La Cova de la Raposa comes from the lieu-dit that names the wine, where the soils are rich in sand. This south-facing vineyard is the first they harvest, as the orientation and the fact that the old vines only produce two to three clusters per vine make them ripen early. They used 35% full clusters for the native fermentation with 30 days of maceration. It matured in two 500-liter oak barrels for 12 months. This wine is quite atypical for the place; it has more finesse and less ripeness. There's a floral note I have never seen here before. It has contained ripeness and alcohol (13.22%) with nice balance. This is a great vintage for this wine. 1,200 bottles were filled in April 2025.
The 2023 Valtuille La Cova de la Raposa aged in only two 500-liter barrels. It is a floral wine with notes of roses, violets and a touch of sour cherries. This offers a frank expression. The palate is lithe and energetic, with a soft, delicate flow and a whisper of herbs on the finish. This has lovely tension.
A blend of 85% Mencía, 10% Alicante Bouschet, and 5% of white varieties, this is grown on sandy soils which reveal a fine and elegant character. It is fermented in 500L barrels and aged in 225L barrels for 12 months resulting in vibrant strawberry fruit and jammy notes without any hint of being overripe. Floral aromas of rose petal and potpourri lift the wine while velvety tannins make for a silky and somewhat seductive finish. Only 1,100 bottles made. 2025-2030
